Chilled Citrus Bow Tie Pasta with Shredded Chicken & Sunny
The sun is up after the Monday rain! :D Hooray! Glorious day for chilled lunches.
I didn't go to the supermarket and made do with whatever's in the fridge & kitchen cupboard. :) I stole Koka's chicken to make this delightful chilled bow tie pasta (Farfalle).
Ingredient (serves 2):
100g of Farfalle
Shredded chicken
Some orange juice - there's no lemon in the fridge
3-4 tablespoons of Mayo
2 hard boiled eggs - to represent the sunny day? ;) I did a bad job in slicing the eggs...duh... :/
Method:
Cook the pasta per instruction on the packaging, set aside
In a mixing bowl, mix the mayo & orange juice well
Add the shredded chicken & cooked pasta & mix again
Chilled the chicken & pasta and the eggs for at least 30 mins
Enjoy the summer!
