Lin and I are under the weather today. Hence having Szechuan preserved veg & shredded pork noodles for dinner is comforting. :)
Ingredients (serves 4)
Half a block of Szechuan preserved veg (sliced into thinner slabs)
A packet of shredded Szechuan preserved veg for garnishing
10 chicken feets
Garlic
Fried shallots
500g of pork (sliced into strips)
Rice noodles
8 cups of water
This is how a block of Szechuan preserved veg looks like. :) Looks kind of brainy isn't it? Lol :)))
This is for garnishing. :) Before using, drain the liquid away and blanch it with hot water first.
You gotta trim the nails away. Eeekkkk...I got my mom to do it. ;)
Marinate the shredded pork with the following and leave it aside:
Soy sauce
Corn starch
Dash of pepper
Blanch noodles in boiling water till it's soft. Remove the noodles and leave it aside to cool.
Bring to a boil, a pot of water, chicken feets, Szechuan preserved veg and garlic over high heat for approx 15 - 20 mins. Reduce the heat and simmer till the chicken feets soften. Add the marinated pork.
Divide the noodles into 4 bowls. Add the soup and top the noodles with shredded pork and Szechuan preseved veg and dried shallots. Ready to serve! ;)
